St Nicolas Fudge (Borstplaat)

375 gr. sugar
1 dl. milk
1 heaped tablespoon cocoa powder

Mix all ingredients in a saucepan and bring to the boil. Allow to bubble for 5 minutes, stirring all the time. Take off the heat and cool, stirring continuously. When a drop falling from the spoon stays lying on the surface for a moment, and when the surface becomes dull, pour into greased moulds, lying on a greased surface. Allow to set for a few hours.
The trick is not to pour the mixture too soon, as it won’t set at all. Too late is all right, although the shapes will be wobbly!
