Christmas Season





The children have come home for the holidays. Excitedly the dog is jumping around them. In the attic the boxes with baubles have been dug out from under the dust.
The tree is being trimmed. The house is ablaze with light and warmth.

Salmon and Sauerkraut

Lay cooked (wine) sauerkraut (mixed with some crème fraîche or cream) in an ovenproof dish. Lay a slab of salmon on top and cook in an preheated oven (175 C or 350 F) until the sauerkraut is hot and the fish flaky, but still moist. Serve with a sprinkling of dill and mashed potatoes.

Alternately: Heat the sauerkraut and mashed potatoes together in the oven and serve with a sauce, made of gently heated cream (fraîche, double or whipping) with chunks of smoked salmon, and dill added at the last moment.

Amazingly simple and delicious!

Firma Grimm

Op het grauwe deftige huis blinkt een glimmend koperen naambord boven een glimmend koperen trekbel:

Koen strekt zijn hand uit naar de bel. Een heksenlach schettert rinkelend achter de enorme voordeur. Na een tijdje wordt die geopend door een dwerg. Hij gaat Koen voor door de donkere bomen gang waar grillige takken van het plafond naar hem graaien.
In de kamer van mevrouw Grimm is alles van snoep. De tafel is van chocola, en de stoelen zijn van peperkoek. Slierten drop hangen als franje aan de gordijnen.
Koen schuifelt naar de kromgebogen vrouw die in een enorme leunstoel van ijswafel zit.
“Dag mevrouw Irma,” zegt hij.
“Ik heet niet Irma; ik heet Firma!”
Ze komt zwaaiend met haar lange stok-armen overeind. Haar dunne donker doorschijnende gewaden wapperen dreigend op hem af. Hij draait zich om, naar links en naar rechts, maar ze blijft hem omcirkelen.
“En meneer Co? Waar is meneer Co,” vraagt hij met bibberende stem.
“Co? Die is er niet! Die is achter Hans en Grietje aan,” krijst Firma, en ze lacht.
Een knisper knetterende schaterlach.

USA Today

I had not been looking forward to our visit to the US the other week.
Returning to it after at least ten years I discovered:

that the people are so friendly;
that they are more critical of their policymakers than many Europeans;
that the weather was gorgeous;
that the billygoat trail was as beautiful as ever;
that our friends are as disgusted with their government as we are;
that they are as warm as I remembered;
that it was just lovely to be back for a week!

Poached Pears

Cook peeled, cored and sliced poaching pears in a little water (or sweet white wine) with lemon, cinnamon and sugar, until they are soft and the juice is siropy. How long this will take depends on the pears.

Serve warm with a ball of vanilla ice cream and grated dark chocolate for its contrasting colour and bittersweet taste.
