Salmon and Sauerkraut

Lay cooked (wine) sauerkraut (mixed with some crème fraîche or cream) in an ovenproof dish. Lay a slab of salmon on top and cook in an preheated oven (175 C or 350 F) until the sauerkraut is hot and the fish flaky, but still moist. Serve with a sprinkling of dill and mashed potatoes.

Alternately: Heat the sauerkraut and mashed potatoes together in the oven and serve with a sauce, made of gently heated cream (fraîche, double or whipping) with chunks of smoked salmon, and dill added at the last moment.

Amazingly simple and delicious!
