Sauerkraut and Bacon

Although almost vegetarian, I love this delicious recipe for sauerkraut.

slab of uncooked, unsmoked bacon,
mashing potatoes,
sauerkraut,
honey,
milk,
salt and pepper.

preheat oven to 150°C/300°F.
Put the bacon on an oven proof dish in the oven. Boil the potatoes, and add the sauerkraut towards the end. When done, mash them together with milk, salt and pepper.
Baste the bacon regularly, add some water if it starts to burn, and glaze it with honey towards the end.
Take the bacon out of the oven after about an hour and slice it. Mix the sauerkraut with the pan juices in the oven dish. Serve, topped with the baconslices.
