Post Party Soup

This is a clear soup I quickly made coming home after a party.

Onion or shallot
Tarragon and parsley
vegetable stock cube
oil or butter
(salt and pepper)

Sauté thinly sliced onion in the oil or butter. Add the tomato, cut in cubes, and soon after: tarragon, stock cube and enough water. Allow to boil for 10 minutes. Correct the seasoning and add the chopped parsley.
