Chicory and Cheese Sauce

Melt some butter (or vegetable oil) in a saucepan. Softly sauté washed and sliced chicory in it. Put a lid on and simmer until done. Mix in some grated aged (Gouda of Cheddar) cheese and some chème fraîche, until all is well intergrated and the cheese has melted. Season with salt, freshly ground pepper and freshly grated nutmeg.
Delicious with old fashioned boiled, mashable potatoes.
