I hardly ever deny myself a good evening meal. Often I hope for enough leftovers to heat them and serve them on brown bread and butter. Yummy! The butter will melt under the hot potato-cum-veggie mash. If there are no leftovers I cook the simplest meal:
Fry an onion in oil or butter with a good dash of curry powder, salt and pepper. When the onions are soft and golden, add sliced tomatoes. Cook until mushy. Break an egg into the mixture. Leave the yoke whole, cover with a lid, and wait till done. I usually do not have the patience and stir the egg into the tomatoes. Serve over the same bread and butter as above.
Quick, healthy and delicious!
