Pizza



The boys made pizza, forever dawdling in the kitchen, talking, bullshitting, and playing with food: stirring the dough and then kneading it, nibbling on the ingredients, rinsing a glass and putting it where it wasn’t needed.
This way it took them two hours to roll out the dough, make the topping, and bake it in the oven.
The result was wonderful! All the conversation, the careful handling, the love of food and cooking had gone into the pizza.
Try it. You will taste the difference. So here’s the recipe for the dough:

Mix into 2 cups of tepid water:
1 tablespoon yeast
1 tablespoon olive oil
1 tablespoon sugar
1 tablespoon salt or less.
Gradually stir into it: 5 cups of flour, or as much as will be needed to make a ball that holds together well.
Allow to rise in a draught free place covered with a damp tea towel for about 4 hours.
Roll out the dough fairly thinly, layer with your favourite toppings and bake in a preheated 225º C/450º F oven until crispy and done.

Make sure to dawdle, and chat, and feel the food, and nibble for two hours, or it won’t taste the same!
